BARTENDER TIPS

1/2 oz. of liquor is equal to 1 count

Using a pourer on your bottle, to measure 1 - 1/2 oz. of liquor, count "1001...1002...1003" as you are pouring.

Highball

Fill glass two-thirds full of ice before adding liquor then add the mixer. Don't stir drinks with carbonated mixers.

Cocktails, lowballs, and other shaken or stirred drinks

Fill shaker half-full of ice. For lowballs, fill the glass about half-full of ice before pouring drink.

Shaken drinks that contain light cream

Drinks can be made as blended drinks, substituting vanilla ice cream for the light cream.

Blended drinks

First, fill blender half-full of ice. Add more ice if necessary as you are blending.

Stemmed glassware

stemmed glassware are used for pre-chilled drinks. When a drink recipe calls for a stemmed glass, the drink always has to be pre-chilled before pouring into the glass.

Rock, or bucket glassware

are used for drinks that are not pre-chilled.

Cooler, collins, or chimney

are names the same type of glassware. These glasses are used for multi-liquor and mix drinks.

Wine glasses

White wineglasses are usually longer and narrow than red.

Shooter or cordial glassware

are used for shooters or after dinner cordials.

1 Dash = 1/6 teaspoon (1/32 ounces)
1 Jigger = 1 1/2 ounce

BARTENDER MIXING DIRECTIONS

Build• Pour liquor or cordials, juice, mix over ice, directly
into serving glass.
Chill or Stir• Pour all liquor or cordials, juice, mix over ice,
directly into stainless steel mixing can as drink
recipe lists.
• Hand turn the ice and ingredients until a second
freeze. Stir about 20 times.
• Dump ice from mixing glass, strain from can
into glass.
Blend• Pour all ingredients over ice, directly into serving
glass.
• Pour into blender container, blend on high speed
for 5-10 seconds.
• Pour back into glass.
Shake• Pour all ingredients over ice into serving glass.
• Pour into stainless can, and hold together.
• Shake 3-4 times.
• Pour back into serving glass.
Layer• Pour first ingredient (cordial) into serving glass.
• Pour next ingredient (cordial) over spoon slowly
to get layered effect.
Frozen Drink• Pour all ingredients over ice in serving glass.
• Pour into blender, and blend until smooth.
• Pour back into glass.

KEY DEFINITIONS

Alcoholic BeverageAny beverage containing at least one-half of one percent (0.5%) alcohol by volume, including malt beverages, unfortified wine, fortified wine, spirituous liquor, and mixed beverage.
Malt BeverageAny beer, lager, malt liquor, ale, porter, and any other brewed or fermented beverage containing
at least one-half of one percent (0.5%), and not more than six percent (6%) of alcohol by volume.
Unfortified WineAny wine with any alcoholic content produced only by natural fermentation or by the addition of pure cane, beet or dextrose sugar, with an alcoholic content of not less than 6% nor more than 17% by volume.
